Mango Crostini

Call me crazy, but I grew up eating mangoes on toast for breakfast during the summers every year. My family has this thing for pairing sweet and savory flavors together – not everybody likes it, I can tell you that! I guess its very similar to eating fruits with cheese  – just like the French people. Its something about pairing the savory and sweet together – it somehow balances the flavors out….lets just say I am a big fan of this combination.

So the inspiration behind this recipe is my crazy genetic taste buds and the French!

I smeared some goat cheese flavored with various herbs on the baguette (slightly toasted). The tang from the cheese compliments the mangoes really well. You can use plain goat cheese and that should taste great as well. I also made this beautiful balsamic vinegar and honey reduction sauce to drizzle on top of the crostinis. You put both vinegar and honey in a non reactive metal pan and cook it on low heat till it becomes a beautiful, shiny and thick reduction. This sauce is absolutely delicious with desserts as well – specially the ones with strawberries.

I also added some finely chopped fresh basil on top of the crostinis although I intended to use arugula instead – but where are the  ingredients in the store when you want to use them? If you can get your hands on arugula then please use it instead of basil for this recipe. That said, basil tastes pretty good too.

Its a super fast & an easy preparation – give it a go and let me know if you like the flavors, because if you do…I will try to come up with more recipes in the future with combinations like this.

Makes 8 crostini

Coking time 15 min

Things You Will Need:

For Balsamic Reduction

1/2 cup balsamic vinegar

1/4 cup honey

Mix both ingredients in a non reactive metal pan.

On medium low cook till the mixture reduces into a thick sauce. Let cool at room temperature.

For Crostini

Goat cheese

1 ripe mango, cut into bite size dices

1/2 loaf french baguette, cut into slices

some basil leaves

  1. Toast the baguette in the oven for 2 minutes till the bread gets a little bite.
  2. Generously smear goat cheese on the baguette slices.
  3. Top the crostini with few pieces of mango.
  4. Drizzle the balsamic reduction and garnish the crostini with fresh basil leaves. Serve right away.
